Week of 9/23/2017

You can see I have quite a casserole themed dinner week ahead. Casseroles are THE BEST for two reasons – 1. they’re super easy and what Mom doesn’t like EASY?! 2. They taste even more delicious as leftovers so I don’t have to worry about making them ahead of time and them not tasting as good. This week I decided to show a breakdown of my costs per meal so that maybe it would give you a good idea of what your total for each meal should be around. During my grocery pick up last week Walmart gave me a $5 coupon for my next order. Do I need to say again why you should be doing grocery pick up with them?! Anyway, that put me about $45 under my weekly budget! Cha-ching!


Kids – Great Value Frozen Blueberry Pancakes w/ syrup and Chocolate Almondmilk – Total $7.17 

Me – Healthy Pumpkin Spice Latte and Red Spark Energy Juice  . – Total $14.38 (1 can of pumpkin lasts me 2 weeks. Not an expense I had this week)

Husband – Oatmeal w/ peanut butter and banana, and Oikos Triple Zero Yogurt – Total $6.56 (banana and peanut butter price included in other sections. I get the big container of oatmeal and it will last months. Also a cost I don’t usually have to include.)


Kids – Corn Dog Muffins (I have to triple this recipe. My 10-year-old gets 4/day and my 4-year-old gets 3/day. I also use uncured hot dogs because I like to pretend to be healthy), Cucumbers w/ ranch, Generic creme sandwich cookie, Sun-Maid Vanilla Yogurt Raisins – Total $14.59

Me – Leftovers from dinner the night before

Husband – Spinach leaves, Salmon, Sweet Potato, Bolthouse Yogurt Dressing – Total $3.77 (I only had to buy a bag of frozen Salmon this week as he apparently lived on air last week. Either way, it saved!)

Mid-day Snack 

Kids – Stauffers Whales Cheddar Cheese Snack Crackers – Total $3.14 (12 count box)

Me – So Delicious Coconut Milk Yogurt – Total $7.90

Husband – Banana w/ peanut butter – Total $3.62


**These recipes make A LOT of food. I personally didn’t have to double them to get leftovers for lunch**

Saturday – Biscuits and Gravy Casserole – Total $3.89 **DOUBLE**

Sunday – One Pot Chili Mac & Cheese – Total $10.56

Monday –  Cheesy Sausage Croissant Casserole – Total $6.69

Tuesday – Rice and Meat (this is a family recipe. 2lbs ground beef/turkey, 2 cans Rotel, 2 packs of Sazon, garlic, and adobo. Serve over rice.) – Total $.92 (ground turkey covered in above price. rice already in pantry)

Wednesday – Tuna Casserole – Total $6.08 

Thursday – Vegetarian Tortilla Casserole  – Total $9.97

Friday – These are designated Pizza nights, always. It’s something we’ve budgeted into our own budget separate from our grocery budget. Gives the kids something to look forward to and me a night to be lazy. It’s Friday!
